Gastronomy

This region has a great variety of traditional dishes such as barbacoa de borrego (lamb), mushrooms soup, chicken and lamb mixiote, fresh trout prepared in different ways, chinicuiles (maguey red worms), escamoles (ant eggs), miners enchiladas, miners tacos, pasties, bread prepared with pulque, chalupas, field peas soup, quesadillas de gualumbos (made with maguey flowers), quesadillas made with white flowers and a great variety of mushrooms, with xoconoxtle (cactus fruit) sauce.

Desserts include palanquetas de piloncillo con nuez (walnut pralines), candied fruit, piloncillo (brown sugar), mermelada de cahuiche (wild berries jam) and sweet bread called cocol with rice pudding, caramel fudge or custard.

Among drinks we can find wines, fruit liquors and pulque (alcoholic drink made with maguey), the traditional drink of old Miners, it can be taken natural or prepared with fruits or vegetables (curado), chabela type, with red soda, or an explosive combination of pulque and beer known as calichal.
